ANZAC Biscuits Recipe – A Kiwi Classic
Nothing like a long weekend to make us feel like baking. What would ANZAC day be without ANZAC biscuits Perfect for morning tea, afternoon tea or even just before bed with a cup of tea, these classic Kiwi biscuits are packed with nostalgia. Bake them and take them into the office to share with your team, for a low key approach to team building. This recipe has to be the GOAT. The original Edmonds Cookery Book recipe doesn’t need tweaking, it’s just as good as you remember.
ANZAC Biscuits
Ingredients
1/2 cup plain flour
1/3 cup sugar
2/3 cup desiccated coconut
3/4 cup rolled oats
50g butter
1 Tbsp golden syrup
1/2 tsp baking soda
2 Tbsp boiling water
Method
Mix together flour, sugar, coconut and rolled oats. Melt butter and golden syrup. Dissolve baking soda in to boiling water and add to butter and golden syrup. Stir butter mixture into the dry ingredients. Place level teaspoonsful of mixture onto cold greased trays. Bake at 180C for about 15 minutes or until golden.
